A collaborative late-summer culinary and botanical experience at Gorge Permaculture, rooted in the ingredients, materials, and makers of the Columbia Gorge.
Guests will harvest from the landscape and move through hands-on charcuterie and goat cheese flavor making, hapa-zome botanical printing, natural pigment painting with Molly Holmlund, a cooking workshop lead by Petra Knapp of Native Provisions using leaf wrapping and various open fire cooking techniques, and a tasting of Bethany Kimmel’s natural wines before gathering for a seasonal dinner inspired by leaves, flowers, fruit, and the late-summer harvest. The evening closes with sauna, cold plunge, and open Gorge Onsen hours.
An optional overnight stay allows one to extend their experience for a slow Monday morning, coffee, tea, cacao, and breakfast.
